LESUA KI SABJI, recipe of how to make lasoda or gunda sabji

Main ingredients –lesua and raw mango

Step by step recipe of lesue ki sabji – lesua/lasoda/gunda/lasura ki sabji is a very common dish in Rajasthan. It is an easy to make recipe of lesua ka achar.

Lesua is known by many other names like Lasoda, Tenti, Gunda, Dela, Lasura in Nepali and Bhokar in Marathi.

Lesua is mainly famous for the lesue ka aachar in Rajasthan.

I like many of my grandma’s (nani) pickles but lesua and lemon are the best from all.

But today I am sharing the recipe of lesua ki sabji not a pickle.

Here I have used only few ingredients to make this sabji, but it tastes very good. The ingredients are –lesua (gunda), raw mango, red chili powder, coriander powder, turmeric powder, fennel seeds, cumin seeds, oil and salt. These are the basic spices we use in our kitchen.

Ingredients for lesua ki sabji –

  1. Lesua -1/2 kg
  2. Raw mango -100 gms
  3. Red chili powder -1 tbsp
  4. Coriander powder -1 and ½ tbsp
  5. Turmeric powder -1 tsp
  6. Fennel seeds -1 tbsp
  7. Cumin seeds -1 tsp
  8. Oil -2 tbsp

How to make it –

  1. Clean the lesua and rinse them.
  2. Now boil them.
  3. Cool them and remove the seeds from the lesua.
  4. Now heat the oil in a pan and temper with the cumin seeds.
  5. Pour the unseeded lesua into the pan.
  6. Mix well and add red chili powder, coriander powder, turmeric powder and salt to it.
  7. Mix well and cook for 2-3 minutes.
  8. Peel and grate the mango and add into the pan.
  9. Cook until the mango is cooked,
  10. Now switch off the flame and add the fennel seeds into it.
  11. Mix well and serve hot.

Step by step recipe with pictures –

Clean the lesua.

Wash them properly to remove any dirt.

Take water in a large bowl.

Add the lesua into it.

After 10-15 minutes check it whether they are boiled or not. Take one into a plate and press it, if the lesua splits nicely and seed comes out then it ready.

Now strain them and let it to be cool. Then remove the seeds.

Make all the lesua unseeded.

Now heat the oil in a pan

And temper with the cumin seeds.

Pour the unseeded lesua into the pan.

Mix well and add red chili powder, coriander powder, turmeric powder and salt to it.

Mix well

And cook for 2-3 minutes.

Peel and grate the mango

And add into the pan.

Cook until the mango is cooked,

Now switch off the flame and add the fennel seeds into it.

Mix well and serve hot.
