Main ingredients –semolina and curd                                                   

Step by step recipe of kanchipuram rava idli –it is another form of rava idli where semolina is roasted with cashews, peanuts, curry leaves and chana dal. Then it is mixed with curd and steamed.

Idli is a super healthy and nutritious food to have. And this is just another level of rava idli.

Kanchipuram idli is a Tamil Nadu specialty, it is basically idli flavored with spices and lentils.

We can have it anytime in a day like for your breakfast/lunch/snacks or dinner.

I had this kanchivaram idli first time at Bangaluru, at my mummy’s place. But it was a readymade mixture. But then I made this for my own and it came out really good.

Though traditional kanchipuram idli is made y using rice and lentils but as I have to make it instant so I made it with semolina.

Now lets see the ingredients for kanchipuram rava idli –

For idli -

  1. Semolina/rava -2 cups
  2. Curd/buttermilk -1 cup or as required
  3. Baking soda -3/4 tsp
  4. Salt per taste

For tempering –

  1. Oil -1 tsp
  2. Mustard seeds -1 tsp
  3. Chana dal -1 tbsp
  4. Chopped cashews -1 tbsp
  5. Crushed peanuts -1 tsp
  6. Curry leaves -4-5

How to prepare kanchipuram idli –

  1. Take oil in a kadai and temper it with mustard seeds.
  2. Now add the chopped curry leaves.
  3. Now add the cashews in it.
  4. Also add chana dal and roast.
  5. Add the crushed peanuts into it.
  6. Roast for 2-3 seconds.
  7. Now add the semolina to it.
  8. Roast the semolina for 4-5 minutes.
  9. Now remove it in a large bowl.
  10. Let it to e cool down.
  11. Now add the curd into it.
  12. Also add baking soda and salt to it.
  13. Mix well and prepare the mixture of idli.
  14. Now keep aside it for 2-3 hrs for fermentation.
  15. Now take the water in idli maker/steamer.
  16. Now apply oil in the idli maker.
  17. Fill the idli maker with batter.
  18. Steam the idli for 10 minutes.
  19. Check it after 10 minutes whether idlis are cooked or not.
  20. If cooked remove the plates immediately from the cooker otherwise there will be a layer of water on your idlis.
  21. Now let them slightly to cool down. Remove from the plate and serve hot with coconut chutney and sambher.

Step by step recipe with pictures –

Take oil in a kadai

And temper it with mustard seeds.

Now add the chopped curry leaves.

Now add the cashews in it.

Also add chana dal and roast.

Add the crushed peanuts into it.

Roast for 2-3 seconds.

Now add the semolina to it.

Roast the semolina for 4-5 minutes.

Check it if roasted don’t over roast the semolina. It will just take 5 minutes that’s all.

Let it to be cool down.

Now remove it in a large bowl.

Also add baking soda and salt to it.

Now add the curd into it.

Mix well and prepare the mixture of idli.

If your mixture is thick then add more curd to make a right consistency for your idli.

Now keep aside it for 2-3 hrs for fermentation.

Now take the water in idli maker/steamer. heat water efore your you place the idli plates in it, so that your idli will rise nicely in hot water steam.

Now apply oil in the idli maker. Fill the idli maker with batter.

Place them in steamer.

Steam the idli for 10 minutes. Check it after 10 minutes whether idlis are cooked or not. If cooked remove the plates immediately from the cooker otherwise there will be a layer of water on your idlis.

Now let them slightly to cool down. Remove from the plate.

And serve hot with coconut chutney and sambher.
