ACHARI BAINGAN, HOW TO MAKE ACHARI BAINGAN RECIPE

A step by step recipe of achari baingan –fried brinjal tossed with a mixture of onion and some pickle spices.

Achari baingan, when we hear this name we think of something like pickle. But this is actually not a pickle. But a dry curry recipe which is cooked with pickle spices like –fenugreek seeds, black mustard seeds, fennel, nigella/onion seeds and cumin seeds.

We basically use these spices to temper the oil for any pickle preparation. But I am using it for my brinjals so the name is achari baingan.

But believe me when you will make this recipe, you will not forget the taste of it for 2-3 days.

So lets proceed to the recipe -

Ingredients for achari baingan –

  1. Brinjal/medium sized -1/2 kg
  2. Onion -2 medium size
  3. Green chilies -2-3
  4. Red chili powder -1 tbsp
  5. Coriander powder -1 tbsp
  6. Turmeric powder -1/2 tsp
  7. Dry mango powder -1 tbsp/or as par your taste
  8. Oil as required
  9. Salt to taste

Ingredients to temper –

  1. Fenugreek seeds -1/2 tsp
  2. Nigella seeds -1/2 tsp
  3. Fennel seeds -1/2 tsp
  4. Cumin seeds -1 tsp
  5. Black mustard seeds -1/2 tsp

Method to prepare achari baingan –

  1. Wash the baingan/brinjal and the slices of it. (put them in water otherwise they will turn to black).
  2. Now heat 1 cup of oil in a kadhai.
  3. And fry the brinjal in it.
  4. Remove them on a kitchen tissue after turning to dark brown.
  5. Chop the onion and green chilies.
  6. Now heat 1 tbsp of oil in the same pan.
  7. Temper it with black mustard seeds/rai, fenugreek seeds/methi, nigella/kalonji, fennel seeds/saunf and cumin seeds/jeera.
  8. Once they splutter add chopped onions and green chilies into it.
  9. Sauté till translucent.
  10. Now add red chili powder, coriander powder and turmeric powder into it.
  11. Mix well and cook for two minutes.
  12. Now add the fried brinjal into it.
  13. Also sprinkle some salt on it.
  14. Mix well and add dry mango powder in it.
  15. Mix well and switch the flame.
  16. Your achari baingan is ready to it.

Step by step recipe with pictures –

Wash the baingan/brinjal.

And cut it into slices. (Put them in water otherwise they will turn to black).

Now heat 1 cup of oil in a kadhai.

Place some sliced brinjal in it.

Fry them by turning from both the sides.

Remove them on a kitchen tissue after turning to dark brown.

Fry all the brinjal in the same way.

Chop the onion and green chilies.

Now heat 1 tbsp of oil in the same pan.

Temper it with black mustard seeds/rai, fenugreek seeds/methi, nigella/kalonji, fennel seeds/saunf and cumin seeds/jeera.

Once they splutter add chopped onions and green chilies into it.

Sauté till translucent.

Now add red chili powder, coriander powder and turmeric powder into it.

Mix well and cook for two minutes.

Now add the fried brinjal into it.

Also sprinkle some salt on it.

Mix well and add dry mango powder in it.

Mix well and switch the flame.

Your achari baingan is ready to it.
