GOVIND GATTA RECIPE, how to make paneer stuffed gatta recipe

A step by step recipe of govind gatta –a yummy curry recipe made with the dumplings of gram flour dough. Which is stuffed with a paneer and dry fruit mixture. And dipped in a yogurt gravy.

Hey guys I have no idea why this gatta recipe is called govind gatta but I definitely know one thing, that when you will try this recipe you will be fan of it.

This is my first time when I am making this recipe. And I was so surprised to see that it really came out with a delicious curry recipe. So I was very happy to share it with you guys.

As being a Rajasthani my husband useds to tell me that he can have gatta continuously for one month. Isn’t that funny? But seriously this govind gatta is really very tasty.

So you must try this at home. Ekdum hotel jaisa khana ghar pe.

Ingredients for the dough of govind gatta –

  1. Gram flour/besan -1 cup
  2. Oil -1 tbsp
  3. Salt -1/4 tsp
  4. Onion-green chili-ginger-garlic paste -1 tbsp
  5. Chili powder -1/4 tsp
  6. Turmeric powder -1/4 tsp
  7. Garam masala -1/4 tsp
  8. Cumin seeds -1/2 tsp
  9. Kasuri methi -1 tsp
  10. Yogurt -1/2 cup
  11. Asafoetida –a pinch

Ingredients for the stuffing –

  1. Grated paneer -1/2 cup
  2. Raisins/kishmish -7-8
  3. Cashews -1 tbsp
  4. Black pepper seeds -6-7
  5. Salt to taste

Ingredients for the gravy –

  1. Yogurt -1 and ½ cup
  2. Onion-green chili-ginger-garlic paste -1/2 cup
  3. Bay leaf -2
  4. Coriander powder -1 tsp
  5. Chili powder -1 tsp
  6. Turmeric powder -1/2 tsp
  7. Garam masala -1/2 tsp
  8. Cumin seeds -1 tsp
  9. Kasuri methi -2 tsp
  10. Asafoetida –a pinch
  11. Water as required
  12. Coriander leaves for garnishing

Method to prepare govind gatta recipe -

How to prepare the dough for govind gatta ? –

  1. Take a large mixing bowl and add all the ingredients into it.
  2. Mix well.
  3. Knead the mixture into a soft dough.
  4. Add 1-2 tsp of water if needed. Apply some oil on it and keep aside.

Prepare the stuffing –

  1. Take another mixing bowl and add the stuffing ingredients into it.
  2. Mix well and keep aside.

How to prepare the balls of govind gatta –

  1. Apply a little oil on your palms, and make 6-8 balls out of the dough. (I have made some extra as par the need of my family, like that you also can raise the ingredients and make according to your need.)
  2. Now press the ball to make a flat circle about 3 inches diameter.
  3. Put 1 tsp of stuffing mixture on the flat circle.
  4. And bind the ball again.
  5. Do the same with all the remaining dough balls.
  6. Heat a large pan and add enough water to it for boiling dough balls.
  7. Once the water starts to boil add the dough balls.
  8. Boil the dough balls till they become light in weight and start floating on boiling water surface.
  9. Take out the dough balls from water.
  10. Now heat another pan and add oil to it, for frying the dough balls.
  11. And fry them till they turn golden brown.

Preparing the gravy/sauce for govind gatta –

  1. Heat 2-3 tbsp of oil in a pan.
  2. And temper it with bay leaf, cumin seeds and asafortida.
  3. Now add onion-green chili-ginger-garlic paste.
  4. And cook until oil leaves the sides.
  5. Now add chili powder, coriander powder, garam masala powder along with 1 cup of water which you used for boiling the dough balls.
  6. Add this mixture into the pan and cook for 5 minutes.
  7. Now add yogurt to it, and stir consistently until it begins boiling.
  8. Add fried balls, kasuri methi and salt.
  9. Let it boil on medium flame for 7-8 minutes.
  10. Remove from heat garnish with grated paneer. Your Rajasthani govind gatta is ready to be served.

Now add onion-green chili-ginger-garlic paste.

And cook until oil leaves the sides.

Now add chili powder, coriander powder, garam masala powder along with 1 cup of water which you used for boiling the dough balls.

and make a paste of it.

Add this mixture into the pan.

cook for 5 minutes.

Now add yogurt to it,

 

and stir consistently until it begins boiling.

Add fried balls, kasuri methi and salt. Let it boil on medium flame for 7-8 minutes.

Remove from heat garnish with grated paneer.

Your Rajasthani govind gatta is ready to be served.
