COCONUT JAM CAKE

A step by step recipe of coconut jam cake –an eggless sponge cake made with all purpose flour and have nice smell of coconut, with a layer of mix fruit jam.

This cake is made with curd and not with milk. But its really spongy.

It’s another specialty is that it is baked in bati maker or say bati cooker not in microwave.

Many people may not aware with this kind of cooker but its very simple to handle. If you don’t have a bati maker, then you can bake it in normal cooker too.

Only you have to do is, pour half cup of salt in your cooker then place a stand or any plate on it. Then put you cake mould on the stand. Put the lid but before that you have to remove the gasket and whistle of the lid.

Like any microwave, we will preheat over cooker before placing the cake mold.

After placing the cake mould in bati oven or cooker raise the flame for first 5 minutes. And then bake it on low flame for 30-35 minutes. After 35 minutes you just check it with knife whether it is fully baked or not. If your knife comes clear from your cake that means it is baked or if it is not clear then bake the cake for another 5-10 minutes.

Ingredients for coconut and jam cake –

  1. All purpose flour/maida -1 and ½ cup
  2. Curd/yogurt -1 cup
  3. Grated coconut/kasa hua nariyal -3/4 cup and ¼ cup
  4. Baking soda -1/2 tsp
  5. Baking powder -1 and half tsp
  6. Sugar -3/4 cup
  7. Butter -1/2 cup or 100 gm
  8. Oil -1/3 cup
  9. Vanilla essence -1 tsp
  10. pistachew flacks and almond flacks -2 tbsp
  11. tutty fruity -2 tbsp
  12. Salt -1/4 tsp
  13. Fruit jam -1 cup

Method to prepare coconut jam cake –

  1. First of all preheat your bati oven on low flame.
  2. Now mix the curd and sugar in a bowl.
  3.  Whisk it until the sugar dissolves.
  4. Now add the baking soda and baking powder in it. And leave it for 5 minutes for fermentation.
  5. After 5 minutes you will see the bubbles in this mixture.
  6. Take another bowl add butter, salt, vanilla essence and oil in it.
  7. Mix well and keep aside.
  8. Now take 1 and half cup of maida and ¾ cup of grated coconut in a large mixing bowl.
  9. Add the curd mixture in it.
  10. Also add the butter mixture as well.
  11. add tutty fruity, pistachew flacks and almond flacks in it.
  12. Now whisk it thoroughly so that there will not be any lumps in it.
  13. Now Greece the cake mould.
  14. Pour the mixture in it. And spread it. Tap the mould on the kitchen plate form to set it(so that there will not be any bubbles in it).
  15. Now place your mould on the rack of your bati maker and put the lid on it.
  16. First raise the flame for 5 minutes. And then bake it on low flame for 30-35 minutes.
  17. Now check the cake with a knife whether it cooked or not. First when I checked it, it does not come clear.
  18. So I baked it for another 10 minutes and checked it again. And tan tana the knife was clear this time. And my cake was ready.
  19. Now remove it from the rack and let it to be cool.
  20. Now carefully make a layer of it with a large knife.
  21. Beat the jam in a bowl with the help of a spoon to make it smooth. Now spread the jam on one layer of your cake.
  22. Now put the second layer on it.
  23. And spread the jam on it too.
  24. Now sprinkle the grated coconut on it to decorate.
  25. I had some fruit balls so I have decorated my cake with these melon balls.
  26. Enjoy this delicious cake with your friends and family.

I made a heart shape paper cutting to decorate my cake, so I placed it on my cake.

Then sprinkle the grated coconut on it to decorate.

then remove the paper heart from it.

also stick some grated coconut  in the sides of your cake.

I had some fruit balls so I have decorated my cake with these melon balls. Enjoy this delicious cake with your friends and family.
