Pindi chole recipe –this recipe of pindi chole is a complete Punjabi cuisine which is also a “no garlic, no onion” recipe.

It’s a chole recipe made with pomegranate seeds and of other spices.

Ingredients for pindi chole recipe –

  1. Boiled Kabuli chana -1 cup
  2. Black cardamom/badi ilaichi -2
  3. Clove -2-3
  4. Cinnamon/daal chini -1 small piece
  5. Green cardamom/choti ilaichi -2-3
  6. Ghee -1 tbsp
  7. Pomegranate seeds/anaardaana -1 tbsp
  8. Cumin seeds -1 tsp
  9. Green chili/cut in wedges -2
  10. Coriander powder -2 tsp
  11. Dry mango powder/aamchur -1 tsp
  12. Red chili powder -1 and ½ tsp
  13. Garam masala/chana masala -1/2 tsp

For garnishing –

  1. Ginger, cut in wedges -1 tsp
  2. Tomato -1
  3. Lemon -1/2
  4. Coriander leaves, finely chopped -1 tbsp

Method to prepare pindi chole –

  1. Dry roast the cumin seeds and pomegranate seeds in a pan and grind it.
  2. Now heat ghee in pan and add black cardamom, green cardamom, cinnamon and clove, and temper.
  3. Now add green chilies and sauté.
  4. Now add boiled chickpeas, coriander leaves, garam masala, coriander powder, aamchur, red chili powder and salt and mix them.
  5. Mash the chickpeas and add ½ cup of water and cook for 10-15 minutes on low flame.
  6. Now switch off the flame garnish with ginger, tomato, lemon and coriander and serve hot.
