CHOCOLATE MANGO CAKE RECIPE

A step by step recipe of chocolate mango cake –a simple eggless chocolate sponge cake baked in a bati oven, but and have a twist of mango in it.

We know that mango is king of all fruits. And tastes sooo good with whatever we prepare. Such as pudding, pastries, aamras, halwa or any other dish.

Here I have also given a twist to my simple chocolate sponge cake with this mango. And the result which came out was so delicious.

This cake is also made with curd and not with milk like my coconut and jam cake. And its really spongy too.

It’s another specialty is that it is baked in bati maker or say bati cooker not in microwave.

Many people may not aware with this kind of cooker but its very simple to handle. If you don’t have a bati maker, then you can bake it in normal cooker too.

Only you have to do is, pour half cup of salt in your cooker then place a stand or any plate on it. Then put you cake mould on the stand. Put the lid but before that you have to remove the gasket and whistle of the lid.

Like any microwave, we will preheat over cooker before placing the cake mold.

After placing the cake mould in bati oven or cooker raise the flame for first 5 minutes. And then bake it on low flame for 30-35 minutes. After 35 minutes you just check it with knife whether it is fully baked or not. If your knife comes clear from your cake that means it is baked or if it is not clear then bake the cake for another 5-10 minutes.

Ingredients for chocolate and mango cake –

  1. All purpose flour/maida -1 and ½ cup
  2. Coco powder -3/4 cup and 1 tbsp for garnishing
  3. Chopped mangoes -1 cup
  4. Grated chocolate -2 tbsp
  5. Curd/yogurt -1 cup
  6. Baking soda -1/2 tsp
  7. Baking powder -1 and half tsp
  8. Sugar -3/4 cup
  9. Butter -1/2 cup or 100 gm
  10. Oil -1/3 cup
  11. Vanilla essence -1 tsp
  12. Salt -1/4 tsp

Ingredients for chocolate mango cake –

  1. Mangoes -2
  2. Sugar -1/2 cup
  3. Vinegar -1 tbsp

Method to prepare coconut jam cake –

  1. First of all preheat your bati oven on low flame.
  2. Now mix the curd and sugar in a bowl.
  3.  Whisk it until the sugar dissolves.
  4. Now add the baking soda and baking powder in it. And leave it for 5 minutes for fermentation.
  5. After 5 minutes you will see the bubbles in this mixture.
  6. Take another bowl add butter, salt, vanilla essence and oil in it.
  7. Mix well and keep aside.
  8. Now take the all purpose flour and chocolate in sieve.
  9. Sieve it nicely.
  10. Now add the curd mixture into it.
  11. Also add the butter mixture too.
  12. Mix it well with a whisker.
  13. Now add chopped mangoes and grated chocolate into it. Mix and keep aside.
  14. Now Greece a cake mould with butter.
  15. Pour the mixture into it.
  16. Put that in a bati oven and bake the cake. First raise the flame for 5 minutes and then for about 35-40 minutes on low flame.  After that check with a knife, if the knife comes clear that means your cake is ready.

How to make the mango jam spread –

  1. First chop the mangoes and take them in bowl.
  2. Now blend them with a hand blender or mixer grinder.
  3. Now take the sugar in a pan and put it on flame.
  4. Add 3 tbsp water in it. And let it to be melted.
  5. Now add the mango puree in it.
  6. Mix and boil it with some constant stirring.
  7. Cook it until it reduces.
  8. Now add 1 tbsp vinegar into it.
  9. Cook again for a while.
  10. Switch off the flame and let it to be cool.

How to present the chocolate mango cake? –

  1. Now take the cake on a plate.
  2. Spread the mango jam on it.
  3. Sprinkle some coco powder on it. And its done.
  4. Cut into pieces and enjoy.
