ACHARI PARANTHA, RECIPE OF HOW TO MAKE PICKLE MASALA PARANTHA

Main ingredients –wheat flour dough and pickle masala.

A step by step recipe of achari parantha -Achari parantha is a simple parantha with a filling of pickle masala. Or you can say it’s a delicious use of leftover masala of your pickle.

This parantha you can have with curd/raita/chai. You can have this parantha anytime you want such as in your breakfast, lunch or dinner or even as a snack with tea.

If you press it with a pressure or bowl, this parantha will become crispier like a khakhra (Gujarati snack).

As we are north Indian (from Rajasthan) so we eat chapatti more. So I always keep on doing some experiments with my chapatti, to make them different.

You know, you can’t it one thing for whole day. And in my family roti is must. So I make roties but with a twist.

And my husband used to say, tumhare dimag me koi keeda h kya jot um har cheej ko ulti kar deti ho (do you have any insect in your mind, so you twist every food item in a different form) but I follow a line by my favorite chef, Chef Ranveer brar. He used to say, khane ke sath jeetane chaho utane experiments karo, there is no limit of food and no boundaries.

Ingredients for achari parantha –

  1. Wheat flour dough -1 cup
  2. Pickle masala -2 tbsp
  3. Oil for shallow frying

How to make it? –

  1. Divide the dough in 2 portions.
  2. Roll one to make a roti.
  3. Now spread 1 tbsp of pickle masala on half of the roti.
  4. Now fold it twice and roll again.
  5. Cook it on a tawa by applying oil on it.
  6. Cook until it is golden brown and crispy.
  7. Serve hot with curd/raita/chai.

Step by step recipe with pictures –

Take out some pickle masala in a bowl.

Roll the roti and spread the pickle masala on it.

Fold it in half.

Then fold it again to make a triangular shape.

Now roll it again.

Place it on a hot tawa.

Flip it after 1 minute.

Apply some oil on it.

Flip again and apply oil.

Cook until golden brown and crispy.

Serve hot with curd/raita/chai.
