Bread bhaji recipe – it’s a tasty combination of bread and bhaji. Boiled mixed vegetables cooked with onion and tomatoes.

It’s a substitute of pav bhaji, made with lots of vegetables and spices.

Ingredients of bread bhaji –

  1. Chopped Potato -1 cup
  2. Chopped Carrot -1 cup
  3. Chopped Bottle gourd -1 cup
  4. Chopped Brinjal(baingan) -1/2 cup
  5. Chopped Tinda(round gourd/apple gourd) -1/2 cup
  6. Chopped Cauliflower -1 cup
  7. Finely chopped onion -1 cup
  8. Finely chopped tomato -1 cup
  9. Finely chopped green chili -2 tbsp
  10. Crushed garlic -2 tbsp
  11. Red chili powder -1 tsp
  12. Coriander powder -1 tsp
  13. Turmeric powder -1 tsp
  14. Salt to taste
  15. Lemon juice as par your choice
  16. Chopped coriander for garnishing

For tempering

  1. Black mustard -1/2 tsp
  2. Cumin seeds -1/2 tsp
  3. Black cardamom -2
  4. Bay leaf(tej patta) -2

Method to prepare bread bhaji –

  1. Take a pressure cooker and boil the potato, carrot, bottle gourd, brinjal, tinda, cauliflower along with water and salt.
  2. After boiling mesh all the vegetables evenly and keep aside.
  3. Now heat oil in a pan, temper it with black mustard, cumin seeds, black cardamom and bay leaf.
  4. Now after spluttering the mustard seeds add green chili and garlic in it and sauté for 2-3 seconds.
  5. Now add onions and cook until they become translucent.
  6. Now add tomato and all the spices in it and cook until the oil leaves the pan.
  7. Now add meshed vegetables in it and mix well.
  8. Cook for another 5 minutes and squeeze the lemon juice in it and mix well.
  9. Switch off the flame, garnish with coriander and serve hot with toasted bread.
