Dal makhani recipe –step by step recipe of split urad dal cooked with rajma (kidney beans), malai, onion, tomato and spices.
This is my special recipe of dal makhani where I use the split urad dal instead of whole urad dal. This is the one of my favorite recipe which I personally like very much.
Today I make this recipe for lunch and I was so surprised to see that my daughter Anvi too loves this dish. And I was so happy to know that because this recipe contains kidney beans and urad dal which are very good for health.

Let’s have a look at the health benefits of red kidney beans:
1. Prevents diabetes
Red kidney beans fall in the category of low glycemic index foods and they do not spike the blood glucose levels post meal in diabetics. In other words, they raise the blood glucose levels very slowly. Also, they contain good quality carbohydrates and lean protein which makes them a healthy option. And the cherry on the cake is that they are low in fat too. Also, the two amino acids which regulate insulin levels — arginine and leucine are present abundantly in red kidney beans.
2. Lowers cholesterol levels
Rajma is a tremendous source of soluble fibre which helps lower cholesterol levels. Soluble fibre forms a gel when it comes in contact with the stomach contents and this binds the cholesterol and prevents its re-absorption back into the system, thus lowering blood cholesterol levels.
3. Prevents hypertension
Nutritious red kidney beans are also a very good source of potassium and magnesium along with soluble fibre and protein which helps maintain blood pressure within normal range and protects the over-all heart health. Potassium and magnesium dilate the blood vessels and arteries thus assuring smooth blood flow.

Ingredients of dal makhani -
- Soaked Split urad dal/black gram – 2 cups
- Soaked Rajma/kidney beans -1 cup
- Chopped onions -1 cup
- Chopped tomatoes -1 cup
- Chopped garlic -2 tbsp
- Chopped ginger -1 tbsp
- Chopped green chilies -1 tbsp
- Malai -1/2 cup
- Oil -4-5 tbsp
- Red chili powder -1 and ½ tsp
- Coriander powder -2 tsp
- Turmeric powder -1 tsp
- Cumin seeds -1 tsp
- Salt to taste
Method for preparing dal makhani –
- Take urad dal, rajma, 1 tsp salt, ½ tsp turmeric powder and 5 cups of water in a cooker and pressure cook it for 5-6 whistles.
- Now heat oil in a kadai and temper it with cumin seeds.
- Now add garlic, ginger and green chilies into it and sauté for a while.
- Now add chopped onion and sauté until they are translucent.
- Now add tomatoes, red chili powder, coriander powder, turmeric powder and salt to it and mix.
- Cook it until the oil comes up.
- Now add the malai in it and mix well, and cook it for another 2 minutes.
- In the mean while beat the boiled dal and rajma with a beater so that it gives a nice texture and consistency.
- Now add this boiled mixture into the pan and mix well.
- Cook for another 2 minutes and switch off the flame.
- Your dal makhani is ready.
- Garnish it with malai and serve hot.
Step by step recipe –
Take urad dal, rajma, 1 tsp salt, ½ tsp turmeric powder and 5 cups of water in a cooker and pressure cook it for 5-6 whistles. Beat the boiled dal and rajma with a beater so that it gives a nice texture and consistency.
