A step by step recipe of sprouts kadhi –sprouts cooked with a batter of butter milk and gram flour with spices.

The humble kadhi gets an extra shot of nutrition with the addition of sprouts! With just everyday spices, the Sprouts Kadhi gets an enchanting aroma and flavor. Use low-fat curds to pull this nutritious and fiber-rich kadhi further down the calorie counter.

 This is a yummy curry with rice, khichidi or fulka. I cooked it with fulka and it tastes yummy. Remember that the curd or butter milk which you are using should be slightly sour so that the curry gives a tangy taste.

 I am a Rajasthani housewife. All members of my family just love kadhi and gatte ki sabji along with lahsun ki chatney so I keep trying to do experiments with kadhi, for the new taste and variety in it.

 This is also an experiment, yes I know many chefs already have made it before but for me it’s an experiment because I have tried first time and it was delicious.

 Here I have used moth sprouts but you can use any sprout you like, such as Bengal gram sprouts or moong gram sprouts etc…..

 So now lets proceed to the recipe

 Ingredients for sprouts kadhi –

  1. Sprouts -1 cup
  2. Bengal gram flour -2-3 tbsp
  3. Butter milk -2 cups
  4. Red chili powder –1 tsp
  5. Turmeric powder -1/2 tsp
  6. Coriander powder -1 tsp
  7. Ginger-garlic paste -1 tbsp
  8. Salt to taste
  9. Oil -2 tbsp

To temper –

  1. Black mustard seeds/rai -1/2 tsp
  2. Cloves/long -3-4
  3. Black pepper/kali mirch -1/2 tsp
  4. Bay leaf/tej patta -2
  5. Carom seeds/ajwain -1/2 tsp
  6. Fenugreek seeds/methi -1/4 tsp
  7. Cumin seeds-1 tsp
  8. Chopped green chilies -1 tbsp
  9. Curry leaves -6-7

Method to prepare sprouts kadhi –

  1. Take a large bowl and add Bengal gram flour, butter milk, red chili powder, turmeric powder, coriander powder and salt to it and make a batter.
  2. Now heat oil in a kadhi and temper it with black mustard seeds, cloves, black pepper, bay leaf, carom seeds, fenugreek seeds and cumin seeds.
  3. Let them to splutter.
  4. After spluttering, add curry leaves and green chilies into it.
  5. Now add moth sprouts and a pinch of salt to it and cook for 5-6 minutes.
  6. Now slowly pour the gram flour batter into the kadhai and keep stirring.
  7. Continue to stir it up to a boil otherwise the kadhi will curdle.
  8. Now cook it for 10 minutes.
  9. After 10 minutes add ginger-garlic paste to it and mix well.
  10. Now cook it for another 15 minutes.
  11. Now switch off the flame and serve your kadhi with rice, khichidi or fulka.
