A step by step recipe of bathue ka rayta –boiled bathua mixed in curd and other spices and make a delicious rayta.

Chenopodium album is extensively cultivated and consumed in Northern India as a food crop, and in English texts it may be called by its Hindi name bathua or bathuwa. It is called Pappukura in Telugu, Paruppukkirai in Tamil, Kaduoma in Kannada, Vastuccira in Malayalam, and Chakvit in Konkani.

It is also known as cheel bhaji.

Ingredients for bathue ka rayta-

  1. Bathua -250 gms
  2. Curd -500 gms
  3. Red chili powder -1/2 tsp
  4. Black pepper powder-1/2 tsp
  5. Roasted cumin powder-1/2 tsp
  6. Salt to taste
  7. Coriander leaves for garnishing

Method to prepare bathue ka rayta –

  1. Cut the leaves of the bathua and rinse thoroughly so that it is clear from all dirt.
  2. Now take it in a pan and boil it with 1 glass of water.
  3. It will take 7-8 minutes to boil.
  4. After boiling strain it in a strainer.
  5. Now take the entire amount of boiled bathua in your palm.
  6. And press it gently so that water will be completely removed from it.
  7. Now take the curd in a bowl and whisk it.
  8. Now add red chilli powder, black pepper powder, roasted cumin powder and salt to it.
  9. Also add the bathua in it.
  10. And mix it with whisker.
  11. Now your bathue ka rayta is ready to eat. Garnish it with coriander leaves and Serve it with roti/parantha/rice.
