A step by step recipe of aloo matar karanji –a gujhiya shaped snack stuffed with a stuffing of boiled potato and peas. This is a no garlic no onion recipe, which can be edible for people of every generation.

This recipe is my favorite, because it’s very easy and simple to make.

And the second thing about this recipe is, no one will say no to have it. My husband and my daughter, they both just love it.

Most of the time I make it on the occasion of Holi and Diwali. But this can be a good tea time snack for you and your family.  So just make it and grab it.

Ingredients for aloo matar karanji –

For covering –

  1. All purpose flour/maida- 3 cups
  2. Carom seeds/ajwain -1/2 tsp
  3. Oil -3-4 tbsp
  4. Salt to taste

For stuffing –

  1. Boiled and mashed potato -1 and ½ cup
  2. Boiled green peas -1/2 cup
  3. Chopped coriander -1/2 cup
  4. Chopped green chilies -1/2 cup
  5. Turmeric powder -1 tsp
  6. Salt to taste
  7. Oil -1 tbsp for stuffing and as required for frying
  8. Black mustard seeds -1 tsp

Method to prepare aloo matar karanji –

  1. Take all the ingredients in a bowl of covering.
  2. The oil should be that much, that you can make a ball of it.
  3. And knead soft dough of it with the help of water.
  4. Now heat oil in a pan and temper it with black mustard seeds.
  5. Now add chopped green chilies and sauté it.
  6. Now add turmeric powder and mix.
  7. Now add the mashed potato and green peas into it along with salt and mix.
  8. Now also add the chopped green coriander and mix.
  9. Now take a small portion of the dough and roll it round puri shaped.
  10. Now put it on the gujhiya maker.
  11. And put 1 tsp of stuffing on one side of the gujhiya maker.
  12. Now apply water with the tip of your finger on the sides of it and close the gajhiya maker.
  13. Now press it and remove the extra covering from it.
  14. Now heat oil in a kadai and fry them until golden on medium flame.
  15. Serve it with saunth chutney and green chutney.
