A step by step recipe of tomato and carrot soup –one of the simplest and easy recipes of soup made with tomato and chopped carrots.

Ingredients for making tomato and carrot soup –

  1. Tomato -4
  2. Carrot(finely chopped) -3 tbsp
  3. Finely chopped spring onions -2 tbsp
  4. Finely chopped garlic -1 tsp
  5. Corn flour/corn starch -1 tsp
  6. Malai/cream -1 tbsp
  7. Oil -1 tbsp
  8. Black pepper powder -1 tsp or as par your taste
  9. Salt to taste
  10. Sugar -1/2 tsp
  11. Croutons -5-6
  12. Coriander leaves for garnishing

Method to prepare tomato and carrot soup –

  1. Boil the tomato with 2 cups of water, until the skin is separated.
  2. Now grind the tomatoes to make puree.
  3. Now strain it in a strainer to make it fine.
  4. Now heat oil in a pan.
  5. Add the chopped garlic and sauté.
  6. Now add carrot and spring onion into it.
  7. Sauté for 2 minutes (don’t overcook. It should be crunchy).
  8. Now add the tomato puree into it.
  9. Now add the corn flour in 2 tbsp of water and mix well. And add to the soup.
  10. Now add malai into it.
  11. Mix well and cook.
  12. Now add black pepper powder, salt and sugar into it and mix well and cook.
  13. Serve hot in a large bowl; garnish it with croutons, coriander leaves and malai.
