Ingredients for making tomato and carrot soup –
- Tomato -4
- Carrot(finely chopped) -3 tbsp
- Finely chopped spring onions -2 tbsp
- Finely chopped garlic -1 tsp
- Corn flour/corn starch -1 tsp
- Malai/cream -1 tbsp
- Oil -1 tbsp
- Black pepper powder -1 tsp or as par your taste
- Salt to taste
- Sugar -1/2 tsp
- Croutons -5-6
- Coriander leaves for garnishing
Method to prepare tomato and carrot soup –
- Boil the tomato with 2 cups of water, until the skin is separated.
- Now grind the tomatoes to make puree.
- Now strain it in a strainer to make it fine.
- Now heat oil in a pan.
- Add the chopped garlic and sauté.
- Now add carrot and spring onion into it.
- Sauté for 2 minutes (don’t overcook. It should be crunchy).
- Now add the tomato puree into it.
- Now add the corn flour in 2 tbsp of water and mix well. And add to the soup.
- Now add malai into it.
- Mix well and cook.
- Now add black pepper powder, salt and sugar into it and mix well and cook.
- Serve hot in a large bowl; garnish it with croutons, coriander leaves and malai.
