PALAK CORN CURRY, HOW TO MAKE PALAK CORN CURRY RECIPE

A step by step recipe of Palak corn curry – a very delicious curry recipe made with spinach and corn.

Spinach and sweet corn is a delicious combination to have. The sweetness of the corn goes very well with the slight bland taste of spinach. It’s one of my favorite recipes of spinach and corn.

It’s just a variation in palak paneer recipe, instead of adding paneer you have to add sweet corn in it.

Here I have used the frozen corn but, if you have the fresh corn than boil it before adding in the curry.

Here I have used malai in this recipe to give it a creamy texture, but if you have cream than add that instead of malai.

These both ingredients are very nutritious. Both have their own nutrition value. Good for health and skin.

Health Benefits of Spinach. Low in fat and even lower in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.

Health benefits of corn include controlling diabetes, prevention of heart ailments, lowering hypertension and prevention of neural-tube defects at birth.

Ingredients for palak corn curry –

  1. Palak/spinach -1 kg
  2. Sweet corn -2 cups
  3. Chopped onion -1 and ½ cup
  4. Chopped tomato -2 cups
  5. Green chili-garlic-ginger paste -3 tbsp
  6. Malai -1/2 cup
  7. Red chili powder -1 tbsp
  8. Coriander powder -1 tbsp
  9. Turmeric powder -1 tsp
  10. Salt to taste
  11. Oil -3 tbsp
  12. Cumin seeds -1 tsp
  13. Bay leaf/tej patta -3-4
  14. Garam masala -1 tbsp

Method to prepare palak corn curry –

  1. Chop and boil the spinach with 3-4 cups of water.
  2. Now roughly grind it with hand blender.
  3. Soak the sweet corn in 3 cups of water (since I have used frozen corns, if you have fresh than boil it for a while).
  4. Now heat oil in a pan.
  5. Temper it with cumin seeds and bay leaf.
  6. Add onion in it.
  7. Now add the crushed green chili-garlic-ginger paste in it.
  8. Mix well and sauté until the onions are translucent.
  9. Now add chopped tomatoes in it.
  10. Mix well and cook for 3-4 minutes.
  11. Now add red chili powder, coriander powder and turmeric powder into it.
  12. Mix and add salt to it.
  13. Cook well until the oil comes up.
  14. Now add the spinach puree in it.
  15. Mix well and cook for 2 minutes.
  16. Add sufficient water to make gravy (I have added 1 and ½ cup of water but you can add as par your necessity).
  17. Now add corn and mix.
  18. After 2-3 minutes add malai into it and mix.
  19. Now add garam masala and mix well.
  20. Switch off the flame after 2 minutes, and serve hot with rice/roti.
